Southern & Central Thailand
On the trade routes
The story behind it
Where the yellow curry comes from
Yellow curry paste is the most Indian of the Thai pastes. Turmeric, cumin, and curry powder arrived in the country via trade routes—ingredients that otherwise play no role in classic Thai cuisine.
Accordingly, it tastes different: rounder, warmer, and less built on freshness than the green or red paste.
