Isaan
Northeast, Khon Kaen
The story behind it
Where Kuahaeng comes from
Fermented fish sauce — Pla Ra — is the soul of Isaan cuisine. In northeastern Thailand, far from the sea, freshwater fish was preserved through fermentation. The result has a pungent aroma and a deep flavor.
Kuahaeng combines this with smoked mackerel and roasted chili to create a seasoning that is sprinkled rather than spooned.
